Waiting for Mr. Goose

No, it’s not St. Martin’s Day or anything, we just went to Turku to do some bureaucracy and bought a gorgeous 4.5 kilo frozen goose at a local market.

While we were driving back in +32C heat it went from icy cold to cool, so I kept it in marinade overnight and finally cooked it today in the oven.

Marinade:
1/4 cup finely chopped or grated ginger
1/2 cup thyme
1/2 cup mint
1/2 cup parsley
1/2 cup grated garlic
2 table spoon of apple vinegar
1 table
sea salt & white pepper to taste
olive or rape oil – just enough to make that devil’s brew look like marinade 🙂 that is, thick but still liquid

Mr. Goose was stuffed and sealed just minutes before roasting.

Stuffing:
7 green apples, I had Grannie Smith in stock, peeled and chopped w/o seed parts
3 table spoon of dark honey, for ex. buckwheat. If you do not have honey, use dark syrup.
a little salt

Roasting: approx. 3.5 hrs at 170C, or until the juice coming out is transparent. I turned it over twice and added marinade on top with a spoon several times. After that Mr. Gooze was allowed to rest around half of an hour under foil paper and served.
