Not by bread alone

Made a “lazybones’ cheesecake” (or, is it a baked pudding? culinary terms are my weak point) to my Mom’s recipe tonight.

It’s simple, trustworthy as Chuck Norris, time-tested, and goes as follows:

  • Mix 400-500g smooth cottage cheese, 1 egg, 1 tablespoonful of syrup (I used dark syrup), 3 tablespoonfuls of vanilla sugar, 3 tablespoonfuls of semolina, about 1/2 teaspoonful of salt and same amount of baking powder, and one tablespoonful of olive oil in a bowl.
  • Set the oven to 200 degrees C (392F) and whisk the mixture well (or delegate it to your man – I said this would be a lazy cake 😀 ).
  • Pour into a greased cake pan.
  • Bake at 200C for a while and after that drive all the curious noses out of the kitchen and go down to 180C (356F).

Then, just  watch it riiiise and get tan…

Gorgeous isn’t it 🙂 40 to 45 minutes is normally enough – well, at least for my oven.

This cake makes me go back to my childhood days when I used to help Mom in the kitchen.  I always ended up eating dough 😀 mmm, loved it.

These days, no eating dough anymore. Not that I dislike it now, just being a little careful with eggs…

And I tell you, it’s such a shame losing your sweet old habits to salmonella. Fuf! Ridiculous.
